I made a batch of jam sandwich cookies and brought them to Penny's Valentine's Stamp Camp!
- 1 cup butter (or margarine), softened
- 1 cup sugar
- 1 large egg
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1/4 tsp salt
Beat butter a medium speed with an electric mixer until creamy.
Add sugar, beat well. Add egg and vanilla, beat well again. Add flour and salt gradually, beat until blended. Divided dough in half, cover and chill for an hour at least.Roll each portion to 1/4 inch thickness and cut out shapes. Make 2 batches: 1 plain and 1 with the cutout shape of your choice.
Bake at 350 degrees for 8 to 10 minutes, until the edges are barely browned.
I use parchment paper so I can slide the cookies on my countertop and they cool quickly.
To make the sandwiches, just add about a teaspoon of jam in between. I like to sprinkle powdered sugar to make them pretty (and extra sweet!).
